Ingredients

  • 1 pkg Catelli Smart Penne Rigate pasta 500 g
  • 30 mL olive oil 2 tbsp
  • 3 chicken breasts boneless, skinless, cut into strips
  • 250 g mushrooms halved, 1/2 lb
  • 1 red or yellow pepper chopped
  • 1 jar meatless pasta sauce 700 mL
  • 30 mL fresh parsley chopped 2 tbsp
  • Salt
  • pepper freshly ground

Instructions

  • Cook penne rigate according to package directions.
  • Heat oil in a skillet set over medium-high heat; saute chicken until golden.
  • Remove and set aside. Add mushrooms and pepper; saute until tender.
  • Stir in pasta sauce, parsley and reserved chicken; heat through.
  • Season to taste with salt and pepper.
  • Serve sauce over hot penne rigate.
