Ten Commandments of BBQ

  • Know thy cooking methods: direct and indirect.
  • Thou shalt not peek under the lid.
  • Thou shalt not add volatile fuel to the fire.
  • Remember the air vents and keep them open.
  • Honor the gray-ashed briquet.
  • Thou shalt not flip food more than once.
  • Thou shalt not pierce meat with a fork.
  • Burned barbecue is bad barbecue.
  • Thou shall control flare-ups with a closed lid, not a spray bottle.
  • Thou shalt not covet thy neighbors’ secret barbecue recipe, ribs, steaks, burgers, chops nor any food which they grill.
