

Yukon Gold Wedges
Try these with your favourite dip or Apricot Chipotle Sauce.
Ingredients
- potatoes as many as you need/want
- olive oil
- salt
- pepper
Instructions
- Set oven to 400 FF.
- Wash potatoes well - do not peel. Cut each potato in 8 wedges and add to large bowl. Add olive oil 2 Tbsp at a time and mix well. You want to have all wedges 'lightly' coated with oil.
- Generously season with salt and pepper.
- Stand wedges on a silpat or parchment paper lined baking sheet skin side down and bake for 40-50 minutes until golden brown and tender.
