Yukon Gold Wedges

Try these with your favourite dip or Apricot Chipotle Sauce.

Ingredients

  • potatoes as many as you need/want
  • olive oil
  • salt
  • pepper

Instructions

  • Set oven to 400 FF.
  • Wash potatoes well - do not peel. Cut each potato in 8 wedges and add to large bowl. Add olive oil 2 Tbsp at a time and mix well. You want to have all wedges 'lightly' coated with oil.
  • Generously season with salt and pepper.
  • Stand wedges on a silpat or parchment paper lined baking sheet skin side down and bake for 40-50 minutes until golden brown and tender.
