Watermelon Mango Salsa

Ingredients

  • 1 mango ripe, diced
  • 2 Tbsp parsley chopped
  • 1/2 Cup cucumber peeled, seeded and diced
  • 1/4 Cup jicama diced
  • 1/2 Cup watermelon diced
  • 1 Tbsp lime juice
  • 1 lemon zest
  • Pinch kosher
  • Sea salt

Instructions

  • Peel mango and dice. Peel and seed cucumber and dice. Peel jicama and dice. Peel and seed watermelon and dice.
  • Combine all ingredients in bowl and gently toss to mix. Cover with plastic wrap and refrigerate at least 3 and up to 12 hours prior to serving. Taste and adjust seasoning if necessary.

Notes

Fennel works well as a substitute if jicama is not available.
