

Ingredients
- 1 mango ripe, diced
- 2 Tbsp parsley chopped
- 1/2 Cup cucumber peeled, seeded and diced
- 1/4 Cup jicama diced
- 1/2 Cup watermelon diced
- 1 Tbsp lime juice
- 1 lemon zest
- Pinch kosher
- Sea salt
Instructions
- Peel mango and dice. Peel and seed cucumber and dice. Peel jicama and dice. Peel and seed watermelon and dice.
- Combine all ingredients in bowl and gently toss to mix. Cover with plastic wrap and refrigerate at least 3 and up to 12 hours prior to serving. Taste and adjust seasoning if necessary.
Notes
Fennel works well as a substitute if jicama is not available.
