Ingredients

  • 1 tbsp olive oil vegetable oil or butter 15 mL
  • 1/2 lb. Mushrooms sliced, fresh, 250 g
  • 2 tbsp parsley fresh, minced, 25 mL OR
  • 1 tbsp herbs minced, fresh (tarragon, basil or thyme) 15 mL
  • 1 clove garlic minced
  • Pinch salt
  • 1 clove garlic minced
  • Pinch salt

Instructions

  • Heat vegetable oil, olive oil or butter in a large skillet over medium-high heat. Add 1/2 lb. of sliced fresh mushrooms and saute for 3-5 minutes or until starting to brown.
  • Add minced parsley or minced fresh herbs (thyme, basil, or tarragon), minced clove of garlic, and a pinch of salt, saute for 1 minute.
  • Serve hot as a topping on burgers, steak, chicken, salad or as a simple side dish.

Notes

Tip:
It is important to use a large pan so the mushrooms are in a single layer and will brown rather than steam in their own juices.
Variations:
Substitute dried herbs using 2 tsp (10 mL) of Italian seasoning.
