Kitchen Fiesta with the Kids

(NC) – Moms know it’s often hard to get kids to eat healthy and unique foods. Smell, texture and, of course, distinct taste can often discourage unrefined palates from trying something new. But it doesn’t have to be a battle. By getting the kids involved with preparation they’ll know exactly what they’re eating and feel a sense of achievement. By using trusted ingredients in unexpected ways, like Kellogg’s Rice Krispies cereal, you know they’re eating something they like.

Why not have your kids help you create this twist on a classic Mexican dish. When preparing Saucy Soft Tacos, have the kids measure the ingredients, and talk to them about the ingredients as you add them to the pan. Not only is this a good math lesson, but the kids will learn about different flavours and ingredients that go well together in meals.

This simple recipe is not only delicious, but fun to eat. Kids will enjoy the break from conventional table manners and relish the fact that it’s finally polite to eat with their hands.

Saucy Soft Taco

Ingredients

  • 1 lb ground beef lean, 500 g
  • 1/2 cup onion chopped, 125 mL
  • 1 1/2 cup corn frozen, thawed, 375 mL
  • 19 oz tomatoes diced, 540 mL or salsa
  • 3/4 cup ketchup 175 mL
  • 2 cups Rice Krispies cereal 500 mL
  • 1/2 tsp salt 2 mL
  • 1/2 tsp chili powder 2 mL
  • 12 flour tortillas 8 inch

Optional Toppings:

  • cheese shredded
  • green onions chopped
  • sour cream
  • salsa
  • sour cream
  • salsa

Instructions

  • In large skillet, cook ground beef and onion over medium heat until meat is browned. Stir in corn, tomatoes, ketchup, cereal and seasonings. Simmer over low heat about 10 minutes, stirring frequently.
  • Warm tortillas in oven or microwave. Spoon 1/2 cup (125 mL) of the meat mixture onto each tortilla. Add toppings. Serve immediately.
