Herb Crust for Baked Fish
Even though it’s not always easy to gather together for a meal, it’s worth the extra effort. Make dinner time family time by preparing a healthy dish that is pleasing to the palette. This delectable herb crust recipe created by one of Canada’s leading chefs, Jason Bangerter, can be used with your favourite fish or seafood. Halibut, tilapia, large sea scallops and salmon all work well. It’s one of several recipes by Bangerter featured at www.all-bran.ca that can help make healthy, happy eaters in your home.

Ingredients
- 1 cup bread crumbs Japanese panko
- 1/4 cup Kellogg's All-Bran Buds or Original
- 2 tbsp. lemon zest
- 1 small mild chili seeds removed, minced
- 1 tbsp. dill fresh
- 1 tbsp. tarragon fresh
- 1 tbsp. parsley fresh
- 1/4 cup olives minced
- 1 tbsp. unsalted butter softened
- Sea salt to taste
- ground black pepper fresh, to taste
Instructions
- Preheat the oven to 375 F.
- Toss all the crust ingredients together in a bowl.
- Line a baking tray with parchment paper.
- Place the fish on the tray and press the crust onto the fish to coat well.
- Bake in the oven for 8-15 minutes depending on thickness of fish and doneness desired.
- The crust should be golden brown and the fish just cooked through.
- Serve on a tomato and white bean or green salad with good quality olive oil, fresh lemon and basil.
