Ingredients
- 4 U.S. Farm-Raised Catfish fillets
- 1/2 lemon per fillet, fresh
Citrus Sauce:
- 1 lime Zest of
- 1 lemon Zest of
- 1 orange Zest of
- 1 lime Juice of
- 6 ounces pineapple juice
- 1/2 cup brown sugar
- 1 tablespoon rosemary fresh chopped
- 1/4 teaspoon salt
Instructions
To Make the Sauce:
- Combine all ingredients in a small sauce pan. Bring to a boil, reduce heat. Simmer five minutes.
Catfish:
- Place catfish in a shallow dish and squeeze 1/2 fresh lemon over each. Sprinkle with salt and fresh ground black pepper. Let sit for five minutes.
- Place catfish fillets on grill, skin side up, for three to four minutes. Turn and grill two to three more minutes.
- Transfer catfish to serving plate, and spoon warmed citrus sauce over each fillet.
