Citrus and rosemary can brighten up even the dreariest winter day. Here, they make a catfish dish flavorful enough for entertaining and quick enough for a weekday:

Ingredients

  • 4 U.S. Farm-Raised Catfish fillets
  • 1/2 lemon per fillet, fresh

Citrus Sauce:

  • 1 lime Zest of
  • 1 lemon Zest of
  • 1 orange Zest of
  • 1 lime Juice of
  • 6 ounces pineapple juice
  • 1/2 cup brown sugar
  • 1 tablespoon rosemary fresh chopped
  • 1/4 teaspoon salt

Instructions

To Make the Sauce:

  • Combine all ingredients in a small sauce pan. Bring to a boil, reduce heat. Simmer five minutes.

Catfish:

  • Place catfish in a shallow dish and squeeze 1/2 fresh lemon over each. Sprinkle with salt and fresh ground black pepper. Let sit for five minutes.
  • Place catfish fillets on grill, skin side up, for three to four minutes. Turn and grill two to three more minutes.
  • Transfer catfish to serving plate, and spoon warmed citrus sauce over each fillet.
