Talking Turkey: Thanksgiving entertaining is easy with one-pot recipes

(NC) – Thanksgiving is best known for family celebrations and bountiful meals made from the fall’s freshest fare. Yet, for those who host this favourite Canadian holiday, it can also be a busy, messy and sometimes chaotic feast to plan.

Fortunately, this Thanksgiving, entertaining family and friends can be easy and delicious by introducing slow cooking to the meal preparation routine. What’s more, Jarden Consumer Solutions, maker of Crock-Pot, has introduced Crocktober inspired recipes to celebrate the festivities and foods of the season.

‘Slow cooking is an easy answer to preparing a tasty Thanksgiving feast,’ says Korey Kealey, food specialist, Food Thought Communications. ‘By using a slow cooker, such as the Crock-Pot Programmable Slow Cooker, cooks can do everything in one pot – from sauteing and serving to reheating and storing. And, while recipes slow cook to their best flavour, the cook can use the time between to enjoy catching up with family.’

From appetizers to desserts – even the show-stopping turkey can benefit from the flavour infusion of a slow cooker. ‘It’s also nice to know that you can save on electricity by opting for a slow cooker instead of a larger oven,’ says Kealey.

Turkey with Pecan-Cherry Stuffing

Ingredients

  • 1 3 to 4 pound turkey breast fresh or frozen boneless
  • 2 cups rice cooked
  • 1/3 cup pecans chopped
  • 1/3 cup cherries dried or cranberries
  • 1 teaspoon poultry seasoning
  • 1/4 cup peach apricot or plum preserves
  • 1 teaspoon Worcestershire sauce

Instructions

  • Thaw turkey breast, if frozen. Remove skin and discard. Cut slices three-fourths of the way through turkey at 1-inch intervals.
  • Stir together rice, pecans, cherries and poultry seasoning in large bowl. Stuff rice mixture between slices.
  • If necessary, skewer turkey lengthwise to hold it together. Transfer to Crock-Pot slow cooker.
  • Cover; cook on Low 5 to 6 hours or until turkey registers 170 F on meat thermometer inserted into thickest part of breast, not touching stuffing.
  • Stir together preserves and Worcestershire sauce. Spoon over turkey. Cover; let stand for 5 minutes. Remove skewer before serving.
