Chicken Curry The Whole Family Will Enjoy
(NC) – Tired of preparing two meals because your kids refuse to eat anything but chicken nuggets? You are not alone. According to a recent Angus Reid survey commissioned by VH sauces, one in five households with kids make two meals – one for their kids and one for adults. Fortunately, there are easy ways to offer a meal that will appeal to the whole family. The key is combining new flavours and ingredients with familiar foods.
Pairing the familiar tastes and aromas of chicken and baked apples with mild curry flavours and hints of lemongrass, this Thai-inspired dish is a meal that the whole family can enjoy. Serve this dish over steamed rice and with your family’s favourite vegetable.

Curried Chicken Thighs with Caramelized Apples
Ingredients
- 2 tsp vegetable oil
- 8-10 chicken thighs bone-in and with skin
- 1 cup VH Thai Market Yellow Curry Cooking Sauce
- 2 apples thinly sliced
- 2 Tbsp butter
- 2 Tbsp brown sugar
- 1 Tbsp cider or white wine vinegar
- 2 Tbsp fresh cilantro coarsely chopped (optional)
Instructions
- Heat vegetable oil in a large saute pan over medium-high heat. Place chicken thighs skin side down in oil and brown well, about 5 minutes. Turn chicken over and brown the other side, about 3 minutes.
- Remove chicken and pour off excess oil. Return chicken to pan with VH Thai Market Yellow Curry sauce and 1/4 cup water. Cover and simmer for 15 minutes or until chicken is cooked through. Remove lid and simmer sauce to thicken if needed.
- While chicken is cooking, heat butter in a small saucepan over medium heat. Saute apples for 3 minutes, add brown sugar and vinegar. Continue to cook apples until softened and golden brown. Serve chicken with sauce and topped with apples and cilantro.
