Ingredients

  • 1 lb lean ground beef 500 g, or turkey
  • 1 medium onion chopped
  • 1 tsp chili powder 5 mL
  • 1 tsp cumin 5 mL, ground
  • 1/2 tsp salt 2 mL
  • 3 cups brown rice cooked, 750 mL
  • 1 16 oz can pinto beans drained 1, 475 mL
  • 2 4 oz cans green chilies 118 mL, diced
  • 1 tomato seeded and chopped, optional
  • Cheddar cheese Shredded, optional
  • cilantro Fresh, for garnish, optional

Instructions

  • In large skillet over medium-high heat, cook meat until brown, stirring to crumble; drain fat. Add onion, chili powder, cumin and salt; cook until onion is tender. Stir in rice, beans and chiles; cook until heated through. Top with tomato, cheese and cilantro, if desired.
