(NC) – High cholesterol increases the chance of developing heart disease – a leading cause of death of Canadian men and women – yet unmanaged high cholesterol remains one of the most common conditions affecting Canadians. In fact, almost half of all adult Canadians (48 per cent of men and 43 per cent of women) have unhealthy cholesterol levels.

Olympic gold medal speedskater, Gaétan Boucher joined Making the Connection to urge Canadians to take action to protect their heart health by taking control of cholesterol. Because Gaétan has a family history of heart disease, he understands this means he is at risk himself. But Gaétan has made the commitment to look after his heart and be proactive about managing his cholesterol before a problem develops. Part of this commitment, along with regular exercise, is making healthy food choices.

Gaétan Boucher's Beef Bourguignon with Noodles

Ingredients

  • 3 lb. stewing beef
  • 2 tbs olive or canola oil
  • 1 Spanish onion minced
  • 7 cups mushrooms halved, 1-1/2 lb.
  • 3 cloves minced garlic or use 3/8 tsp garlic powder
  • 1/2 tsp thyme dried, or 1 tbs of fresh thyme
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/4 cup all-purpose flour
  • 1-1/2 cup red wine
  • 1-1/2 cup hot beef stock
  • 1 bay leaf
  • 1-1/2 lb noodles or other pasta
  • 1 tbs parsley chopped, fresh

Instructions

  • Trim fat from beef. In Dutch oven, heat 1 tbsp (15ml) of the oil over medium-high heat; brown beef in batches, adding remaining oil as necessary. Transfer to plate.
  • Add onion, mushrooms, garlic, thyme salt and pepper to pan; cook over medium heat, stirring occasionally for about 8 minutes or until softened and liquid is evaporated.
  • Return beef and any juices to pan. Sprinkle with flour; cook, stirring, for 1 minute. Add wine, stock and bay leaf; bring to boil. Reduce heat, cover and simmer for 2.5 hours. Uncover and cook for 30 minutes or until thickened and meat is tender. Discard bay leaf.
  • Meanwhile in large pot of boiling salted water, cook noodles for 8 to 10 minutes or until tender but firm; drain well. Divide among plates.
  • Spoon bourguignon over top; sprinkle with parsley.

  • Beef is an excellent source of iron, B-Vitamins and zinc. A three ounce serving of beef provides 39 per cent of the zinc most people need in a day.

It’s time Canadians make the commitment and take charge of their heart health. If you have high cholesterol, make sure it’s properly managed to reduce the risk of developing heart disease or stroke. For many Canadians, a healthy diet and regular exercise are not enough to reach target cholesterol levels. Ask your doctor about your target, and then take action to reach it.
