
(NAPSA) – While flowers are blooming outdoors, it can also blossom inside with colorful desserts that will delight family and friends.
Brightly-colored Jell-O(r) gelatin ‘pokes’ through in every slice of a Gelatin Poke Cake, making this dessert a delicious way to complement virtually any decor. A versatile recipe, the gelatin can be prepared in any one of the colors of the rainbow. Or, for those who can’t get enough of creamy treats, a Fluffy Lemon Fruit Pie is a wonderful twist on a traditional cheesecake. The delightful combination of sweet, fresh berries and tangy lemon pudding will make mouths water and give cause to celebrate.

Ingredients
- 1 pkg. 2-layer size white cake mix or cake mix with pudding in the mix
- 1 cup water boiling
- 1 4-serving size pkg. Jell-O Gelatin Dessert any flavor
- 1/2 cup water cold
- 1 8 oz. tub Whipped Topping thawed
Instructions
- HEAT oven to 350 F.
- PREPARE and bake cake mix as directed on package to make two 9-inch cake layers. Remove from oven. Cool cake in pan 15 minutes. Pierce layers with large fork at 1/2-inch intervals.
- MEANWHILE, stir boiling water into gelatin in small bowl at least 2 minutes until completely dissolved. Stir in cold water; carefully pour half of gelatin over each cake layer. Refrigerate 3 hours.
- DIP one cake pan into warm water 10 seconds; unmold layer onto serving plate. Spread with about 1 cup of the whipped topping. Unmold second cake layer; carefully place on first cake layer. Frost top and sides with remaining whipped topping.
- REFRIGERATE at least 1 hour or until ready to serve. Decorate as desired. Store leftover cake in refrigerator.

Ingredients
- 1 cup raspberries fresh or sliced strawberries
- 1 6 oz. or 9 in. graham cracker crumb crust prepared
- 1 8 oz. pkg. Cream Cheese softened
- 1 cup milk cold
- 1 4-serving size pkg. Jell-O Lemon Flavor Instant Pudding & Pie Filling
- 1 8 oz. tub Whipped Topping , thawed, divided
Instructions
- PLACE berries on bottom of crust.
- BEAT cream cheese in large bowl with wire whisk until smooth. Gradually beat in milk until well blended. Add pudding mix. Beat until smooth. Gently stir in 1/2 of the whipped topping. Spread over fruit in crust.
- SPREAD remaining whipped topping over pudding mixture.
- REFRIGERATE 3 hours or until set. Garnish with additional fruit if desired.
Notes
Great Substitute: 1 cup cherry or strawberry pie filling may be substituted for the fresh fruit.
