Ingredients

  • 1 1/2 cups all-purpose flour 375mL
  • 1 tsp baking powder 5mL
  • 1 tsp baking soda 5mL
  • 1/4 tsp salt 1mL
  • 1 cup Balderson Heritage 5 Year Old Cheddar Cheese grated, 250mL
  • 1/3 cup granulated sugar 75mL
  • 1 egg beaten
  • 1/2 cup Beatrice milk 125mL
  • 3 tbsp Lactantia butter melted 45mL
  • 1/3 cup green onion finely chopped, 75mL

Instructions

  • Preheat oven to 400 F (200 C) and grease 18 mini muffin cups.
  • Combine flour, baking powder, baking soda, salt and grated Balderson Heritage 5 Year Old Cheddar Cheese in a bowl. Make a well in the centre. Combine remaining ingredients. Add to dry ingredients and gently fold together until just mixed and somewhat lumpy. Spoon batter into greased muffin cups.
  • Bake 10 to 12 minutes or until golden.
