Whip Up A Frugal Family Feast

Ingredients
- 1 large onion finely chopped
- 5 cloves garlic minced
- 1 can tomatoes diced, with juice 28 oz/796 mL
- 1 can tomato paste 5.5 fl oz/156 mL
- 2 tbsp butter melted, 25 mL
- 2 tsp ginger ground 10 mL
- 2 tsp curry powder 10 mL
- 1 tsp cumin ground 5 mL
- 1 tsp cinnamon 5 mL
- 1 tsp coriander 5 mL
- 1/4 tsp cardamom ground 1 mL
- 1 lb chicken thighs skinless 454 g, with or without bone, about 6-8 pieces
- 4 cups spinach fresh 1 L
- 1 tbsp lime juice 15 mL
- 1 cup plain yogurt 3% 250mL
- cashews Toasted
- cilantro to garnish
Instructions
- Place onion, garlic, tomatoes, tomato paste, butter, ginger, curry powder, cumin, cinnamon, coriander, cardamom and chicken into Crock-Pot slow cooker; stir. Cook on high 4-6 hours or on low 8-10 hours. Chicken will shred when finished.
- Mix in spinach, lime juice and yogurt, garnish with cashews and cilantro.
