Ingredients

  • 1 large onion finely chopped
  • 5 cloves garlic minced
  • 1 can tomatoes diced, with juice 28 oz/796 mL
  • 1 can tomato paste 5.5 fl oz/156 mL
  • 2 tbsp butter melted, 25 mL
  • 2 tsp ginger ground 10 mL
  • 2 tsp curry powder 10 mL
  • 1 tsp cumin ground 5 mL
  • 1 tsp cinnamon 5 mL
  • 1 tsp coriander 5 mL
  • 1/4 tsp cardamom ground 1 mL
  • 1 lb chicken thighs skinless 454 g, with or without bone, about 6-8 pieces
  • 4 cups spinach fresh 1 L
  • 1 tbsp lime juice 15 mL
  • 1 cup plain yogurt 3% 250mL
  • cashews Toasted
  • cilantro to garnish

Instructions

  • Place onion, garlic, tomatoes, tomato paste, butter, ginger, curry powder, cumin, cinnamon, coriander, cardamom and chicken into Crock-Pot slow cooker; stir. Cook on high 4-6 hours or on low 8-10 hours. Chicken will shred when finished.
  • Mix in spinach, lime juice and yogurt, garnish with cashews and cilantro.

Tips:
Delicious served with jasmine or basmati rice. Make up your own little packages of spice mixture for a last minute dinner idea.
