Instructions
  1. Heat olive oil in large saucepan over medium heat. Add leeks, fennel and saute about 5 minutes. Add remaining ingredients and bring to boil. Cover and simmer until potato is tender, about 15 minutes.
  2. Puree soup in Vita-Mix machine in batches; return to same pot. Thin with more broth if needed. Season soup with salt and pepper to taste.
